In my family it is very hard to please everyone when it comes to preparing dinnertime meals. I am vegetarian, my teen daughter “demands” a meal that requires some effort (she wants a meal freshly cooked and piping hot preferably out of an oven) and my son is very health conscious ( i.e.- no fast food for him!). Luckily my chili satisfies everyone because not only is it vegetarian, but I serve it hot ( steaming for my daughter) and healthy ( over brown rice for my son). It is also a pretty quick and simple recipe- from start to finish it takes about an hour to complete and it is a meal that is cooked in one large pot ( so the cleanup is a breeze!).
The only caveat is the issue of storage. When you make chili there is no easy way to make it in small portions so you end up with a large pot of chili and since we are only a family of four the key is to preserve it and have it for more than one meal Since my chili is made with whole canned tomatoes- it leaves behind a bright orange residue on every container we store it in. Getting back to the chili it is really quite easy to make and takes about an hour to prepare and cook for the most part. So without further ado here it is a real crowd pleaser that I am sure your family will love as much as we do and a chance to win a Rubbermaid BRILLIANCE 10-piece set!
One package extra firm tofu
16oz of 16 bean soup mixed beans
One green pepper
One large onion
5 garlic cloves
1/4-1/3 cup chili powder
2 cups frozen mixed vegetables
32oz can of peeled tomatoes
1) Boil beans until soft and set aside
2) Cut up tofu in 1 inch squares
3) Cut onions, peppers and garlic and set aside
4) In a large dutch oven start frying up tofu and after browned set aside
5) Sautee cut up onions, pepper and garlic
6) When onions and peppers softened add can of tomatoes, chili powder and tofu and heat to boiling and after boiling simmer for 30-45 minutes
7) Add in frozen vegetables and 5-10 minutes later add in 8-12 oz of mixed soft beans
8) Serve over rice
